La Noix Gaillarde Hazelnut Powder

Hazelnut powder is outstanding in pastries, pie crusts, cakes, cookies, pancakes and quick breads, but it can also be used in savoury applications. Use it in place of bread crumbs in meatballs, or as a coating for chicken and fish. Combine with almond flour for a deliciously complex nut flavour.
Chocolate Hazelnut Cookies
Ingredients required
- Preheat oven to 120'C
- Mixture 1
- Mix coconut oil and maple syrup, stir well
- Add egg and vanilla extract, mixed well together
- Mixture 2
- In another big bowl, mix hazelnut powder, baking soda and salt. Mix well
- Put mixture 1 and 2 together and mixed till combined
- Stir in chocolate chunk
- Prepare baking tray with silicon mat or baking paper
- Scoop 1 tablespoon of mixture and place it on mat/paper
- Press it down to flatten mixture
- Top with additional chocolate chunk or stuffed it into cookie dough
- Place it into oven and bake for 15mins
- Once done, allow cookie to cool before removing from mat/paper
