Hazelnut powder is outstanding in pastries, pie crusts, cakes, cookies, pancakes and quick breads, but it can also be used in savoury applications. Use it in place of bread crumbs in meatballs, or as a coating for chicken and fish. Combine with almond flour for a deliciously complex nut flavour.

Chocolate Hazelnut Cookies

Ingredients required

2 tablespoons coconut oil (melted)

3 tablespoons maple syrup (or honey - or keto syrup)

1 large egg

1 teaspoon pure vanilla extract

2 cups hazelnut powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup chocolate chunk of your choice

Preheat oven to 120'C
Mixture 1
Mix coconut oil and maple syrup, stir well
Add egg and vanilla extract, mixed well together
Mixture 2
In another big bowl, mix hazelnut powder, baking soda and salt. Mix well
Put mixture 1 and 2 together and mixed till combined
Stir in chocolate chunk
Prepare baking tray with silicon mat or baking paper
Scoop 1 tablespoon of mixture and place it on mat/paper
Press it down to flatten mixture
Top with additional chocolate chunk or stuffed it into cookie dough
Place it into oven and bake for 15mins
Once done, allow cookie to cool before removing from mat/paper
