Fourme d'Ambert is a French blue cheese made from cow's milk. It comes from the town of Ambert in the Auvergne region of France. The cheese has a cylindrical shape and a natural rind that is greyish-white in color.

Fourme d'Ambert has a creamy and mild taste with a hint of nuttiness, and a smooth and velvety texture. The blue veins in the cheese are created by the addition of Penicillium roqueforti mold during the cheese-making process.

This cheese can be enjoyed on its own, but it also pairs well with fruits, nuts, and honey. It can be used in recipes such as salads, sandwiches, and pasta dishes. Additionally, it pairs well with red wine, particularly those from the same region, such as Beaujolais.
